Fiji? Honey cake

10th of October is Fiji Day, and there are two reasons for that: it is the anniversary of Fiji's independence from British Colonial in 1970, but before that, in 1874, King Seru Epenisa Cakobau, ceded Fiji to the UK.
The preceding week to Fiji Day is Fiji Week. A week of festivities. A different theme is chosen every year, but common elements include religious ceremonies and cultural performances, focused on the two main ethnic cultures — Fijian and Indian. 
For this occasion, I made a lovely Fijian honey cake.
Bonus side again, I could make my family happy with a slice and a cup of hot coffee.
