Cookies for Iran's انقلاب ایران‎

On the 11th of February, Iranians celebrate their "Islamic Revolution's Victory Day", a national holiday with state sponsored demonstrations in every city.

In 1979, there came an end to the protests against the reign of the Shah (Mohammad Reza Pahlavi). On that same day, the Imperial Iranian Army revoked their allegiance to the throne and declared neutrality. It all lead to the start of the Iranian Republic, under the Grand Ayatollah Ruhollah Khomeini. 

But enough history for now.
For this occasion, I baked delicious tea cookies with cardamon flavour, topped with pistachio nuts.
